Quick! Did you get your honey something special for Valentine’s Day? There’s still time! Grab your coat, race out to the store and pick a gushy card because I can’t help you with that. BUT I can help you by sharing this gorgeous and sexy, lemon mug cake that literally takes seconds to make! You can save the day by serving this gooey cup of deliciousness to your special someone and save on the pocketbook. I mean, who really eats all those chocolates in the huge heart-shaped boxes anyway? Half the time it’s a gamble; either choke down the strawberry cream that no one likes or chance the square-shaped one, hoping secretly that it’s the chocolate-covered caramel and that no one finds it before you do.
This delectable mug cake is a serving for one so you won’t have to feel guilty like you would, glaring at the box of chocolates sitting on the counter the rest of the week. Be sure to use a microwaveable mug though!
Lemon Bar Mug Cake
3 tb flour
¼ ts baking powder
1/8 ts salt
2 tb melted coconut oil, cooled
3 tb sugar
1 ½ tb lemon juice
1/3 c powdered sugar
1 – 1 ½ tb lemon juice
Lemon zest to garnish
Mix flour, baking powder, and salt in the mug. Add egg, sugar, oil, lemon juice and combine until mixed. Microwave on high for 90 seconds to 2 minutes. Watch carefully and the center will puff up and set when done. Remove to cool. In another small bowl, mix the lemon juice and powdered sugar. Once the cake is cooled enough, drizzle the frosting over and shave some lemon zest over the top if you desire. Dig in and enjoy!!
