I regularly peruse as many holiday magazines as I can get my hands on during the festive season and found this one in the Southern Living December issue. I tried it a couple weeks ago and am already planning on serving it again over the New Year’s weekend. I made a few tweaks from the original recipe as you’ll see below. The original recipe uses 2 cups of arugula, but I didn’t add it. I only served the crostinis on a platter so they would be easier to handle. Cherry Bleu Cheese Crostini
1. Sauté shallot in hot oil in a medium skillet over medium-high heat 2 to 3 minutes or until tender. Add cherries (and any liquid in package) and next 5 ingredients. Cook, stirring occasionally, 8 to 10 minutes or until thickened. Let stand 10 minutes.
2. Top each with cherry mixture and 1 blue cheese slice. Garnish, if desired.
I made a big impression on the guests we had that evening and was asked for the recipe. The cherries cut the tang of the bleu cheese beautifully. You can’t go wrong with this one as an elegant choice to serve at your event!
